Nicaraguan coffee is delicately balanced. It is bright, lively, and caramely sweet, yet anchored with a rich, milky body. Los Congos is a particularly wonderful example of this marriage of zesty citrus and deep caramel.
An interesting note about this coffee: This lot is a Pacamara varietal, which includes Maragogype beans, known for their huge size.
Importer's Notes:
This farm was acquired by Jose Rene Paguaga Midence in 1998. A good part of the farm is still virgin forest and you get that sense when on the farm. There are all sorts of species of animals such as quetzal, white-faced monkeys and boars to name a few. This area of Nicaragua has probably one of the highest altitudes in the country which usually translates to a good cup. Rene has placed in the cup of excellence multiple times. This is a good indication for a quality focused farmer.
Rene is setting up a cupping lab at his dry mill. This will only help increase the level of quality and be able to have more control throughout the lot building process. (We're) excited to see what Los Congos will bring in the future!"
